Ingredients and spices that need to be Make ready to make Red Chilli Garlic Chutney:

  1. 15-20 Dry Red Chillies
  2. 3 tbsp Oil
  3. 15-20 Cloves Garlic
  4. 1 Inch Ginger
  5. 1 tsp Cumin Seeds
  6. 1/2 tsp Coriander Seeds
  7. For Sauteing:
  8. 1/2 tsp Mustard Seeds
  9. 1/2 tsp Cumin Seeds
  10. 1/4 tsp Asafoetida
  11. 1 tsp Salt

Instructions to make Red Chilli Garlic Chutney

  1. Firstly, remove the stem, break the dry red chillies into small pieces and soak it in water for 2 to 3 hours. If you like your chutney to be spicy then you can keep the seeds or else you can remove them. I have made the chutney with the seeds and it turned out super delicious.
  2. After soaking, you will notice that the chillies have soaked well and have become soft and has doubled in size. Strain the chillies in a strainer and reserve the chilli water for later use.
  3. Heat one tablespoon oil in a pan. Add the garlic cloves. Saute for a minute or two. Add ginger and saute for about 1 to 2 minutes over medium flame until light golden brown in color. You can add some more garlic if you like. Adding ginger is optional but it enhances the flavor of the chutney.
  4. Add cumin seeds and coriander seeds and saute for a minute.
  5. Add in the soaked red chillies and saute for about 2 to 3 minutes over medium flame. Do not over cook it. Switch off the flame and allow it to cool.
  6. Transfer it into a blender. Add two to three tablespoons of the reserved chilli water and blend into a smooth paste.
  7. Heat two tablespoons oil in a pan. Add mustard seeds and allow it to crackle. Add cumin seeds and allow it to sizzle for few seconds. Add asafoetida and saute it.
  8. Now with the flame on low, add the blended red chilli garlic paste and mix it well. Cook over medium flame for about 3 to 4 minutes. Add salt. Cook further for about 6 to 7 minutes more or until the water dries and oil appears at the surface. It will give you a nice dark/deep red color. Switch off the flame. Allow it to cool completely.
  9. Red Chilli Garlic Chutney is ready. Transfer it into a clean, sterilized, air tight container and store in refrigerator. It stays good for almost a month. Enjoy it with dosas, idli, vada, sandwiches, paratha etc.
