- 100 gm dried red chillies
- 8-10 cloves garlic
- 1/2 cup oil
- 1/2 tsp brown or white sugar
- Salt to taste
- 1 tsp vinegar
- Pinch red chilli powder
Instructions to make Asian Chilli Garlic Paste
- I have used home dried red chillies. place them in bowl. pour boiling water over chillies and let them soak for 20-25 minutes. Keep a heavy lid at top of bowl to prevent them from floating on water surface.
- Drain the water,add soaked chillies in blender with some water and blend in a fine paste.
- Add garlic cloves in chopper and grind well.heat oil in pan. Add grinded garlic and fry till chanes colour at medium flame.
- When garlic start changig colour add chilli paste,sugar,salt,vinegar and keep frying till all blended together well and oil starts to separate.
- Let it cool at room temperature and store in a clean air tight jar in fridge you can freeze it as well in cubes to be handy at time of use.
- Note: adjust seasoning to your taste if chillies are too hot you can add more sugar or salt similarly add chopped garlic in batches so that it wont over power the flavour.it can be made with fresh red chillies as well.
